author escape character option?

I need to set an author that includes an '&' in the name.
"Texas A & M University"

How do I tell Calibre to not mess with this when I put it in the Author field? I do not want to change the default behavior for the normal operation of Calibre but for this particular book I need to use the ampersand in the title.

I thought of putting TAMU in as the author, but it sounds too much like a flu medication.

You cannot, & is the character used by calibre to separate mutiple authors, so while the underlying calibre data structures can handle & in author names, actually trying to use it via the GUI will cause you no end of headaches. Use another character instead, for example the "small ampersand" http://graphemica.com/﹠

FWIW: I would either use a '+', so: "Texas A+M University", or spell it out as in: "Texas Ag and Mech University"
