GUI hotkeys?

I have a lot of pdf files wich I generate from internet sites. Often, their content is not representative from the first page cover. So I have to change the cover in the majority of the cases.

I have been looking for any way to access the button which lets to choose the cover for the pdf files with some hotkey, but I was unable.

Is there any hotkey for it?, or even better: Is there any way to assign any hotkey to any part in the GUI that did not have it initially?
