Always Expanded ToC in Nook simple touch

I'm using the fantastic new Calibre Edit ToC to handle a merged food recipe epub.
I was able to create a nested (multi-level) Table of Contents, where I had food categories like Chicken, Pork, Salmon at the top level of the ToC, and then various recipes for the categories on say level 2 ot the ToC.
The whole idea was to have a collapsed ToC so I don't have to page for ever to find a recipe.

Everything is great when viewed on the Calibre Viewer, but on my Nook Simple Touch the ToC is always 'expanded' and what I wanted is always 'collapsed', allowing me to expand a 1st level ToC when I wanted to.

Is appears to be a problem with my Nook...???

Any solutions?

I don't think it's possible to display nested ToC on a Nook Simple Touch...
