One Device at a time
I have 3 different devices that my wife and I use at any given. It appears that calibre can only support one device. I can only select one device. Is this true?

No!
You can only CONNECT one device at a time.

Each device (model driver) allows a custom 'save to' template (configures while device is connected.
Each device allows selection of preferred formats.

Just plug in your devices one by one. calibre will connect to them all, but only one device at a time must be plugged in.
