Language of ebooks

Is there a way to pre-set an ebook default language e.g Chinese during the conversion? I'm using calibre in English and I realise all conversions i make set the ebook language as English.

Se tthe language of the book by clicking edit metadata.

I have a feeling that if the language is not specified for a book, then Calibre takes the OS GUI setting. Kovid can confirm this assumption.

The advice to set it to what you want when wrong via Edit Metadata is correct regardless.
