Is is possible to show last view time on any book?

And then order based on access time? It would be very useful because it better helps a user to locate what books he has browsed lately.

Is there a way to change the number of books to be displayed on that list?

Or, is there a way to change the Date column as Date of last view?

No, and no. calibre doesn't track the view time of books.
