Calibre list the books according to author. How do get it to list the books according yo title , This will make it easier for me to create categories for subjects?

Click the column heading. If the direction of sort is wrong... Click it once again.

We call them "Tags". Type one or more of them into the Tags box separated by commas. If the Tag exists, the dropdown will appear with suggestions to select or keep typing for a new one.
disable tags in the Metadata download customization to prevent Tag overload.

Some people prefer a custom column for this.
