you stick a pin in at both ends to make a small hole, you then blow through the egg to remove the contents. Thereby obtaining the egg for cooking without cracking the egg .....

I'd hazard a guess that this is what Geoff used to do as a lad when he went birds egging - which of course no one would condone nowadays - but which filled many spring days for a northern youth way back when
