Using non-English fonts

Hello,

I am trying to convert my non-English books available in PDF format into .epub and .mobi formats. However, in the absence of fonts, I am getting a heady mix of !s and ?s. Can someone help me embed those fonts or point me to a previous thread of discussion that does?
