Device: All 4 Kinds: epub eink, Kindle, android eink, NxtPaper
Sage. 8″
But the notes are a separate app. There is handwriting to text. Exports.

Epub: use touch keyboard, text exports. Pen is image/vector only & doesn't export.

PDF: Creates a separate layer if unprotected PDF. No conversion. Copy back PDF.

The Nebo app for notes (Mywrite for Students) is seriously cutdown/crippled compared to iOS or Android because it's eink.

A 10.9" Nxtpaper 11 is far superior. The Nxtpaper 14 is nicer to read PDFs, but a bit heavy for notes.

Clara doesn't support pen input. The only current Kobo devices that do are the Libra Colour, Sage and Elipsas. Colour eInk cuts the contrast so it can be harder to read in certain conditions without the front light. Personally I don't mind it, but some here have stronger opinions.

Keep in mind when using pen input on eInk on Android the app needs to be designed around that for a good experience. The notetaking/markup on Boox devices with the built-in apps is not bad but don't expect to have a good time with any app you want like for example OneNote.

Also the Nxtpaper devices Quoth mentions are NOT eInk at all and are just traditional LCDs with special matte coatings to give more of a paper like appearance. They still require a backlight to work. I don't think Quoth has a very high opinion of color eInk or eInk on Android which is why they recommend the Sage or Nxtpaper devices. Personally I think they are both fine if you understand the limitations beforehand and can work with them.
