unless you are referring to something that is not saved within the book package itself, the trashcan absolutely does save all meta data. all you have to do is drag the book package from the trash back into calibre and all your meta data is there.
The same thing with windows.

No, it doesn't, which is why the calibre trash system was built. The metadata in the book file (the "format") is usually wrong unless you have used the calibre command to update it. For example, changing tags, custom columns, the title, or the author(s) in calibre does not update the book. If you update the format (e.g. epub) before you delete it then all is good. My suspicion is you don't do that.
