Just specify mac address when starting usbnet:

insmod $driver_root/g_ether.ko host_addr=46:0d:9e:67:69:eb dev_addr=46:0d:9e:67:69:ec

I set up usbnet and it works well with network manager on my ubuntu.
Mac address is only one part. On windows and most likely on linux as well, if I don't use dhcpd the pc will choose a random address, that might not be in the same subnet as the kobo, thus making it hard to get a connection. With dhcpd running, this will not be an issue. Giving the connection a fixed address on the pc side is just another unecessary step for the user that the dhcpd makes unnecessary.
