The first (uuid) is automatically generated and cannot be accessed (per Kovid - the developer) See post #8 in this thread. To change the tag to [EBOK] : Preferences => Conversion => Output Options => Mobi Output => Personal Doc Tag = change [PDOC] to [EBOK].
