For the David Eddings books, I recommend starting with the Belgariad series. Pawn of Prophecy is the first book.

I'll also add Brandon Sanderson's The Way of Kings and Robert Jordan's The Wheel of Time series.

I second The Way of Kings. I still haven't read WOT.
