Well, I think you should read the wiki
This image shows, how it works: A color pixel consists of 2x2 b/w pixels with a color layer on top, thus halving the pure b/w resolution. Obviously Ectaco tells only the b/w resolution, whereas Hanvon (which jetBook color is based on) itself stated 800x600 color resolution in
these pictures.
