Harry is correct, IR touch screens could be used with a flexible display. However, to work the case would need to be rigid, or the IR transmitters would not align with receivers. They probably used a flexible case to demo the product (look how far I can bend it!) and that would negate using and IR touch screen.
They might be able to use a resistive touch screen bonded directly to the flexible display as well, but I'm not sure about capacitive.
