Non-infringing uses:
1) Converting personally owned items for personal use. The courts have long held that you can copy record albums to cassettes, etc, FOR PERSONAL USE ONLY, legally. You can photocopy an entire book that you own, FOR PERSONAL USE ONLY, legally. You just can't distribute the copy to anyone else.
2) Scanning out-of-copyright books. Perfectly legal.
3) Scanning excerpts from magazines or books for review purposes. Legal.
4) Scanning documents to which you (or your company) owns the copyright or has legal license to.

There are plenty of non-infringing uses.
