At the very top of the main menu does your Kindle say "Showing All xxx Items........By Most Recent First (or Title)? Click on that line and tab right until you can select Collections. Once your Kindle is sorted to display Collections, then only new books which are not yet in a collection will appear as individual titles after the list of Collections.
