Anoukaimee, when the popup menu with different options comes up (Copy, Highlight, Note, Dict., More), click on the word "Highlight". Additional "Highlighting" options will appear. Place a check mark on "Long-Tap & Drag to highlight selected text directly". Click "OK".

You should now be able to long press and then drag to select your desired text. When you lift your finger, the text remains highlighted and you can continue reading. Only issue is you can't highlight a single word this way; you have to long press and drag, selecting more than one word.
