calibredb catalog test.csv --help to review the command line switches. For --fields, you will see:

Should be a comma-separated list of fields.
Available fields: all, title, author_sort, authors, comments,
cover, formats, id, isbn, ondevice, pubdate, publisher, rating,
series_index, series, size, tags, timestamp, uuid,
plus user-created custom fields.
