No matter what field you decide to use (tags, language, whatever) you're going to have to set that data somehow.

Editing the language field to be correct seems like the most logical choice, as that's specifically what it's meant to represent and it has the advantage of often being correct already—and as HarryT points out, because it's well-defined, there are other tools like dictionary lookups that will benefit from setting it properly.
