No, I can vouch for the fact that you wouldn't lose the built-in dictionaries, but the decision is yours.

Many of the settings are just hard-coding the default values that would be used if the code wasn't there. If no font-family is specified then the generic
font-family:serif is assumed.

but you now know about the <body> tag. As an aside, a little knowledge of html and css goes a long way when trying to tweak ebooks.
