Its because LCDs have polarizing filters inside and your sunglasses also has one. Turning the iPhone on its side means you've just rotated it 90 degrees and the light coming out is the wrong polarization for the filter in your sunglasses.
Unfortunately you can't do much about it. You'll have this problem with all LCDs and that particular type of sunglasses lens.
