Hello and welcome.

Not sure what format you want to create. But, if you are talking about Mobi alas most of their software is only for Windows PCs. I think bookdesigner and bookcreator are Windows only too.

However, most of the conversion software is written in python or perl and will run on your Mac. Also, you can use tools to create ebooks with HTML and then use a converter to convert that to a format your prefer.

You should probably check out the Wiki which lists most of the known software.
