FWIW,
Just to test things ... I fired up Sigil and was able to open a huge html file which had lots of jpegs in it, was easily able to split it into chapters, added 3 different sized (and some quite large) gif images and even one animated gif and the whole thing was rock solid!
So I am definitely not seeing what you are seeing at all with Snow Leopard.
You aren't by chance running the PPC code in Sigil under "Rossetta" on a X86 Mac are you? That can cause random crashes and things.
