Although known mainly for his political writings, Burke's masterwork is clearly On the Sublime and Beautiful. On Taste is an introduction of sorts to the main work and well worth the effort to read first. Some of it is dated as science has moved forward a little since the 18th century.

Be warned, he will get you to thinking of things in ways you may never have considered before.
