Yo can do that:
1. Open "
FileManger"
2.
Browse to the path of a file the kind you want (PDF, EPUB...)
3.
Click on it
4. The list of applications that supports that kind of file appears
5.
Click the app you want to use to open that kind of files
6. The application opens the file
7.
Exit the application and repeat from 1 to 4
8. Now the proposed app to open the file is your previous selected app
9. Click on "
Always"
10. Done! Next time you try to open a file of the same type the chosen app is used

To reset default app file type association go to
Android Settings -->
Apps -->
Select de chosen app -->
Open by default -->
Clear defaults
