A 'back cover' is just an image. There is no special code like Cover (flags it so, software can do 'cover' type things and/or Calibre knows what file to update

In the editor:
1 Add the file (image) so it will be part of the book.
2 create a place for it ( a <p... or <div... block is common)
3 with the insert point inside what you created in #2, use the Insert image tool to easily add the proper code
