AFAIK, the Calibre Fetch News feature can generate books in all supported Calibre output formats, including epub and kepub. However, since I don't use this feature, you may want to ask specific questions in the
Calibre Recipes forum.
You can also apparently request a recipe for a specific news site in that subforum. Once you have a recipe, you could then test the book that it generates with the built-in Calibre ebook viewer.
