ABBYY Fine Reader allows you to differentiate between text and image after the software has read your pdf. Otherwise, when performing OCR, some software will mistake text in pictures and read it, instead of keeping the picture intact. This can be important with textbooks.
Also, it makes it fairly easy to remove things like chapter titles are the top of a page, which otherwise wind up appearing periodically within the text of the converted file.
