The funny thing is the burn doesn't destroy the tastebuds. It hurts and clears your sinuses, but it doesn't stop the taste any. I don't ever eat the hot ones on purpose, but you add some minced jalepeno (without seeds and pulp) to Ranch dressing and it makes a wonderful dip. Jalepeno and other chiles add quite a bit to a dish if done right. They can be a mysterious flavor that really, really makes a dish wonderful. I use a lot of New Mexican green chiles (which range in heat). Wonderful paired with chicken and cream (and bit of mustard.)
