There are several categories in the tags browser that do not have columns. News, user-defined categories, and search come to mind. They need to be somewhere. In addition, item renaming, sorting, and the new average rating feature would disappear.
Adding a 'create custom column' to the column heading context menu is a good idea. It would be required to open a dialog box, though, because it must be named and must be given a type. On the downside, you wouldn't see the column immediately, because calibre must be restarted in order for the column to be made 'real'. Thought is required.
