I'm using an old Clie TH55, Palm OS5, and a Mac.
Hope I'm in the right thread here. I can solve _most_ of my conversion problems with TextSoap and then use PorDiBle to convert to Palm-readable files (MobiReader reads them fine and I use it mostly; SmartDoc also works with them fine).

One consistent problem: this character: ó
It should become a hyphen, generally. It doesn't convert with anything I have except Appleworks, which will fix it.

A wish -- to pull up a column of all the non-ASCII characters found in a file, and a blank next to them, into which I could type what should replace each one. Let me save that as a default so I could use it for batches.

I used to have an application that did that in DOS 3.3. Never seen anything like it since.
