Corn Salad
This is ridiculously easy and also pretty good! It's a combination of about four recipes I found while looking for a corn salad recipe I had all the ingredients for. I took out ingredients I don't like, and added ingredients I did, and this is what I came up with. I'm not claiming it's original (someone else has probably come up with the same combination), but I haven't seen it anyplace.
1 bag frozen corn
1 med. ripe tomato, chopped
1/2 to 3/4 finely diced red onion
2 - 4 tablespoons your favorite Italian dressing. I used Tuscan House Italian by Kraft.
Seasoning to taste. I used Tony Chachere's Cajun seasoning.
Empty corn into large bowl (one with a lid). Add tomato and onion. Toss with Italian dressing and seasoning. Put the lid on the bowl and put it in the fridge overnight to allow corn kernels to thaw and flavors to meld. You can add more or less Italian dressing as you like - I like just a hint of it in mine.
