Colour, touch screens, and apps aside, the basic eReader concept with functionality that can address a wide range of user interests still has some way to go. The Bebook Neo/Onyx Boox 60 I feel is possibly moving ereaders in right dirrection.
For me personally, I'd like an ereader with eInk, 9.7 inch screen, full PDF functionality plus support for a wider range of formats (HTML, CHM, DJVU, EPUB), and standard WiFi.
I have no interest in touch screens.
