I have little interest in color e-ink personally. Used to, but after reading on an iPad a good bit I'm just waiting for the right LCD tablet. The refresh speed and other functions are more useful to me than long battery life and less eye strain.

Color eink could have more uses than just books. If the saturation, contrast, and pixel density can be made similar to photographic prints, a color eink screen of that nature could replace photographic printing. Of course, it's years away from being able to touch that level of quality, but perhaps in a decade or so...
