Using the standard ePUB conversion setting, the magazine page scans come out as JPEG and not text.
Calibre doesn't do Optical Character Recognition. If your pdf is a simple scan of the magazine, it's a picture, not text, and Calibre will never change it into text. I'd look for a website for your magazine and a matching recipe. Alternatively, you have to run your pdf images through an OCR program to get text.
