There is enough space in firmware for a single 1.5-2Mb-ish traditional Chinese font. This one, for example:

Jedit uses fonts from your OS, it doesn't have its own fonts.
To view Georgian go to Utilities -> Global Options -> Text Area -> and choose Sylfaen.
Other than that, "Arial Unicode MS" should be able to render all.
