I spoke with the manager at an Apple store a few weeks ago and was told that right now the only way to get them was to order direct from Apple. Stores didn't expect to actually have any in-stock until June. Of course the Michigan Ave. store is one of Apple's flagships so they might get some preferential treatment.
The largest card I happen to have is 16g and it worked fine with that so it appears to be SDHC compatible (also worked with some 8's and some 4's). But people are reporting mixed bags when working with MicroSD cards in adapters. I can say personally it did not like one adapter but I moved the card to another and it worked just fine. I don't think there will be a problem with 64G cards as long as they're following specs. On a non-jailbroken iPad though you're going to be limited to importing photos and video. Jailbreakers with command-line access will be able to do a lot more.
It would be nice if Apple gave developers access to read and write files to cards in 4.0. Carrying around a few cards, the adapters and their small bluetooth keyboard and you've have a great, very portable, little system. Wouldn't survive serious business use, but it would be a very setup to take on a vacation.
