Inspired by a ripe mango, I made a south-east Asian style chicken and coconut curry, with rice.
An exotic blend of lemon-grass, galangal, kaffir lime leaves, coconut milk, garlic, red Thai chillies, basil & cilantro, lime zest, fresh-ground cumin & black pepper with nam pla (fish sauce) for some salt.
It tastes different almost every time I make it due to the availability of fresh ingredients so there really isn't a recipe.
