I use Windows 7, XP, and Ubuntu 9.10 (for the occasional transfer).
As for Mac, it's based on UNIX and so is Linux. As far as easy distros go, there are quite a few, amongst them Ubuntu. Another is SuSE and from what I've heard, DreamLinux, is also pretty for the non-terminal types.
