I make leek and potato soup like this:
Take about 1lb (500 grammes) of leeks and potatoes and an onion. Peel and chop them. Saute the onion gently; then add the leeks and saute some more; then stir the potatoes in. Season, and add water or stock to cover the vegetables by an inch (2.5cm.).
Bring to the boil, turn the heat to low and simmer for an hour. Then liquidise. If the soup is thick then stir in some milk, which adds a certain creaminess to the end product.
