It won't. Pepak has explained why and how to fix it here (if, in your case, it is at all fonts problem and not encoding problem):

"unicode font" is a wrong name. There are "default fonts" used by the system and LRF/RTF/Text viewer, located in /opt/sony/ebook/FONT folder, and there are "epub viewer's built-in fonts" located I have no idea where, probably in an executable.

How to use custom fonts in epubs is described in the pepak's thread.
