oh my gosh DG!!! tartare is one of the most incredibly heavenly tastes out there!!! you just can't imagine! and never when you are eating it is there the thought "I am eating raw meat" enter your head! I'm REALLY lucky that my local butcher will produce it. the downside is that I have to get 5lbs at a time!
