Of course it comes down to personal preference but I by far and away prefer taking notes on a Kindle with the physical keyboard than using the stylus on the Sony 600. Although other people will no doubt prefer using the stylus on the touchscreen. I just dislike the way the stylus seems to scratch across the screen rather than glide and as I have big writing, I can't fit much across the screen if I'm writing.

The keys on the Kindle 2 are small but well-placed in the Qwerty layout. I have small hands and I can type a lot quicker than I text that's for sure.

If it's at all possible I would recommend trying at least one of the devices out.
