WDE's explanation does little to define the most incredible cake IN THE WORLD! It is a very finely milled flour cake with red color that has about a zillion tons of sugar added as well as lots of shortening. The real red velvet cake was make with lard, but in the interests of not slamming arteries shut on the person sitting next to you, they are made with regualar shortening now. Don't accept those wanker "substitues" make with oil, either...
The red is actually red food coloring, but it's the flour, sugar, and shortening that make the cake...
