I think the persistent data connection (thru 3G) and GPS are the two big differences.GPS isn't just for driving apps-there are several location aware apps that also take advantage of it.

None of the apps I mentioned require Jailbreaking. I never got around to it on any of my iPhones I hear there is a nice community built around it though.
