The main cost does come from the sensor. APS-C/4:3 sensors are proportionally more expensive than the "fit-on-the-tip-of-your-finger" variety found in compacts. The optical viewfinder assembly also presumably accounts for at least some of it.

I Know, but its kind of a rarity. You can also hack a lot of Cameras to Get access to the raw file, bits not for the faint of heart or very user friendl.
The biggest difference as you said is the Sensor and the Optics, without which just shooting RAW give limited benefits.
