A crossword puzzle app would be perfect. Then I might drop my daily newspaper subscription, in favor of a Kindle subscription (although I'd still miss the comics).
The other obvious application would be an appointment calendar. I've seen a couple of those out there, but they don't look very polished. Anyone got one to recommend?
