Thieves' World, edited by Asprin, was another shared world in the Fantasy genre. I remember the editorial notes--in book 3, Lynn Abbey mentioned being a bit surprised at how first book was a bit heavy on gore & violence. And that book 2, Tales from the Vulgar Unicorn, "didn't ooze out of the mailbox; it ate right through the metal."
Hmm, other shared worlds...
There've been group collaborations in Lackey's Valdemar and Bradley's Darkover, but those aren't the same--they're very much "1 author made the world; everyone else got permission to participate."

I remember Thieves World.
There was a couple of books based on a sci-fi/punk/Fantasy shared world called Borderlands. It came and went quick though. lots of fun
